With over 35 years of experience in the restaurant and hospitality industry, Chef Carlos and his brother Mundo have left an indelible mark on various communities across the United States through the establishment of enduring restaurants.
Raised on a dairy farm in the Central Valley of California, Carlos and Mundo's formative years on this unique farm provided them with abundant resources. Carlos, in particular, cultivated his culinary creativity alongside his mother, Felicita.
Chef Carlos attributes his passion for cooking and foundational knowledge to Felicita, whose inspiration gave rise to distinctive dishes like pollo Durango, mole enchiladas, and margarita shrimp, all of which patrons can savor at Villa Montez restaurant in Tyler, Texas.
Celebrating and honoring his roots and modest beginnings, Chef Carlos infuses each menu he creates with a reflection of his experiences throughout Mexico and South America. The result is a diverse culinary journey that can transport your palate across the Americas.
